Brownies Anyone?

Today, I had my classes start at 7.30-ish and ended at 8.30 ish. I only had the morning report from yesterday's triage duty with 10 patients. The rest of the day is spent at home, wondering what I should do next. So, I decided to bake something since it has been along time since my last cook off. I flipped through my recipes (since it is on the computer, I wouldn't exactly call it flipping) and saw this old one I had saved but never tried before. It was named Chocolate Fudge Brownies. I remembered taking it from a website several months ago, but was too preoccupied to bake this. Finally, I did it today..

I prepared the ingredients to make this "elegant looking" brownies by grabbing butter and chocolate chips from the fridge, sugar, flour and cocoa from the kitchen shelves.

Chocolate Fudge Brownies

1 cup (2 sticks) unsalted butter
2 1/4 cups sugar
4 large eggs
1 1/4 cups unsweetened cocoa powder, sifted
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon vanilla extract
1 1/2 cups flour
2 cups chocolate chips

Preheat the oven to 180 o C

Melt the butter. Take off from heat.

Add the sugar and stir to combine. Return to heat briefly until it's hot, not bubbling.

Transfer to a mixing bowl.

Stir in cocoa, salt, baking powder and vanilla extract.

Add the eggs, beat untill smooth.

Stir in the flour and chocolate chips. Transfer to baking pan and bake for 25 to 30 minutes or until a toothpick comes out clean.

Cool on a wire rack and serve. I usually put the brownies in the fridge after they have come to room temperature, just until they are firm. and eaten with ice cream or by themselves.

Excuse the pictures, these are only taken using a camera phone. I know they are not "cool" or "awesome", but the taste was superb! It was fudgey and very chocolately! Give it a try!
